The situation

What has happened

Saturday night in Quay Bar has a 30th birthday group of 25 arriving at 8:00 pm, a corporate group dining in Tidewater and steady hotel guest traffic. The Bar Supervisor is on with you. The Restaurant and Bar Manager wants the bar set up to standard, cocktails and standard drinks poured correctly, identification checked for anyone who looks under 25, and any refusal of service handled politely and recorded in the WHS register the same night. Eleven staff have RSA certificates expiring soon and the manager is watching service standards closely.

Your brief. Set up and operate the bar for the shift, apply the Responsible Service of Alcohol Policy to every sale including one refusal role played by your assessor, record the refusal correctly, and complete the end of shift stock and cash reconciliation.

What to look for

Evidence guide

Observe correct standard drink measures, identification checks, early recognition of intoxication signs and a calm, non-confrontational refusal that includes alternatives and safe transport. The register entry must be factual and timed. Look for safe handling of the spill and an accurate reconciliation.
